This was a favorite of mine growing up.

Mini Kababs, stuffed with pine nuts and cooked to perfection in a tomato and onion stew, it really hits the spot on those days when you’re craving something hearty. The great thing about it is, although hearty, on it’s own, it’s a very healthy dish. You get some protein and veggies, and if you really need some carbs with dinner, it pairs amazingly with white rice or fresh pita. So versatile and easy to make!

Besides salt, pepper and some olive oil, all you really need for this dish is 4 ingredients, which you might already have on hand.

I like using fresh tomatoes as it really does give the whole dish a fresher taste, but canned can certainly be used.

As for the Kababs, the meat is seasoned with salt, pepper and allspice and then formed.

I love stuffing them with a few pine nuts that end up being a nice surprise and add a textural difference to each bite.

The last step is to just pour the tomato mixture into an ovenproof dish, arrange the mini Kababs on top and bake!

4 medium Tomatoes, chopped into wedges
1 medium Onion, sliced
1 lbGround Beef

Meanwhile, prepare the kababs. Season the ground beef with the allspice, 1 1/2 tsp salt and 1 tsp pepper.

Form the meat into mini kababs and stuff with 4-6 pine nuts lengthwise.

Pour the prepared tomato mixture into a casserole dish.

Arrange the mini kababs over the top and cover with some of the tomatoes and onion to prevent over-browning.

Bake in a 350 degree oven for 40 mins, until meat is cooked through.

Enjoy with fresh pita bread or white rice.
