Wheat Germ.
Oh, so what is wheat germ?
It’s the nutrient rich embryo of the wheat plant which is responsible for its reproduction. It is removed when milling flour for a few reasons, one of them being the oil that is in the germ which would reduce the shelf life of flour if it was kept. This little germ is a great source of energy, fiber, protein and vitamins such as folate, vitamin E and Vitamin B. The list goes on, but this isn’t really a health post so hopefully you’ll take my word for it and start sprinkling it into your food like I plan to do. Well, like I said, I didn’t exactly keep this recipe healthy, but if you can enrich cookies with nutrients, why not?? This is however a coconut oil cookie and as a result allllmost vegan, but it does have eggs, so I missed it by this much?.
Eggs have protein though, so they’ll camouflage all the chocolate and sugar in these cookies ?.
For the mix-ins, I used a combination of white, semisweet and milk chocolate along with shredded coconut and chopped pecans. These mix-ins are completely customizable based on your preference, but if you use my measurements, you’ll be very happy with the results.
Bake these up and enjoy them warm or at room temperature. They’re chewy with a bit of crunch, and packed with delicious, molasses-y, wheat-y flavor. They’re great with milk, coffee, tea, or simply on their own.
Now get to baking.
Chewy Wheat Germ Coconut Chocolate Chip Cookies
About 26 Cookies
1 1/4 cups Flour
1/2 cup + 2 tbsp Wheat Germ
1 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Baking Powder
1/4 tsp Baking Soda
2/3 cup Coconut Oil
1 1/2 cup Brown Sugar
2 Eggs
1 tsp Vanilla
1/2 cup Unsweetened Shredded Coconut
1/2 cup Semisweet Chocolate Chips
1/2 cup Milk Chocolate Chips
1/2 cup White Chocolate Chips
1/4 cup Pecans, chopped
Preheat oven to 375°F. Line a cookie sheet with parchment paper.
In a medium bowl, whisk together the flour, wheat germ, cinnamon, salt, baking powder, and baking soda.
Beat the coconut oil and brown sugar in the bowl of your electric mixer until fluffy. Add the vanilla and the eggs, one at a time, beating after each addition. Beat the mixture until fluffy, about 2-3 minutes.
Add the flour mixture in thirds and stir until it is incorporated. Fold in the chocolate chips, coconut and pecans.
Drop heaping tablespoonfuls onto prepared baking sheet a few inches apart. Bake for 8-10 minutes being careful not to over-bake.
Allow to cool slightly and enjoy with a tall, cold glass of milk.
