Crunchy Spring Salad

A refreshing, crunchy salad so perfect for these beautiful spring days!

Toss together the veggies, whisk together the vinaigrette ingredients and pour over the salad. Allow to marinate for a bit and enjoy! It’s as delicious as it is beautiful.

Crunchy Spring Salad

2 Carrots
1 Cucumber
1 Apple
1/4 cup Arugula
1 cup White Cabbage
1 cup Red Cabbage
1 Orange, juiced
2 Lemons, juiced
1 tbsp White Wine Vinegar
1 tbsp Olive Oil
Salt

Chop the carrots, cucumber and apple into matchstick size pieces.

Coarsely chop the arugula, white cabbage, and red cabbage.

Whisk together the orange juice, lemon juice, vinegar, olive oil and salt to taste.

Toss everything together and allow to marinate for at least 15 minutes.

Serve cool and enjoy!
