Cherry Coconut Creamsicles

Have you seen alllll the popsicles floating around the internet last week?!!Apparently it was Popsicle Week and that is what was contributing to the influx of pops out there.  I know! So awesome, right? You can thank Billy from Wit and Vinegar who came up with the whole thing as well as all the bloggers who came out full swing with some pretty amazing concoctions. Fudgesicle Brownie PopsiclesPineapple Chili’d Ginger Cream PopsChocolate Dipped AVOCADO Pops, and these outrageous  Late Night Snacksicles that I just want to sink my teeth into!

I’d never made popsicles at home before but thought I’d try my hand at a version. I wanted a fresh and creamy take on it which is how these Cherry Coconut Creamsicles were born. I used fresh cherries, coconut cream, sweetened condensed milk and a splash of vanilla and that’s it!

I actually had never thought about how SIMPLE it was to make popsicles at home and now I want to do it all the time!  Just stir up the ingredients, pour into your molds and freeze. The hardest part is waiting for them to set! Basically any liquid can be turned into a popsicle, which is making my head spin with ideas.

I didn’t have fancy molds on hand (which was what had always deterred me from making them) but I did have some clear plastic tumblers and paper straws so those became my molds and sticks. Improvisation at its best, no? I cut the straws in half and they ended up being the perfect size for these pops. You can adjust the length based on the depth of the cups you’re using and how much of the mixture you pour into them. I loved the retro look of the paper straws with the shape of the round tumblers.

These are so satisfying on a hot summer day and a decadent treat when you need a cool dessert. I loved the combination of the cherries and coconut with the creaminess that came form the coconut cream and condensed milk. You’ll be surprised at how these few ingredients can come together and make such a beautiful, delicious treat.

Cherry Coconut Creamsicles
6 Creamsicles

3 cups Cherries, pitted
1 cup Coconut Cream
1 cup Sweetened Condensed Milk
2 tsp Vanilla

In the bowl of your blender or food processor, purée 2 cups of the pitted cherries until smooth. Reserve the remaining one cup to stir in once the mixture is ready.

Add the coconut cream, sweetened condensed milk and vanilla and blend until smooth.

Stir in the remaining 1 cup of halved cherries. Divide the mixture evenly among your desired molds.

Freeze the Creamsicles for about an hour then stick a straw (or more likely, a popsicle stick) into the center of the popsicles. Freeze for another 6 hours or overnight, until the popsicles are completely frozen.

Place the molds into a bowl with slightly warm water for a few seconds to loosen the popsicles out of the mold and enjoy!
