Mr. B and I had Ma’louba last night for dinner, and along with the simple diced salad, I made Laban b’ Khyar, a Middle Eastern version of a Tzatziki sauce. In Syrian cuisine, this cucumber yogurt sauce is usually served alongside certain rice dishes, and Ma’louba is definitely one of those! The sauce adds a refreshing, slightly tangy bite to the dish which I absolutely love and the textural contrast of the crunch from the cucumber in the yogurt is one I look for when having this with rice.
I also happen to be a big fan of Labneh, Middle Eastern strained yogurt, and cucumber for breakfast, lunch or even as a snack, so being able to have this saucy rendition with my dinner is definitely a win for me.
This recipe is super simple and is actually one of those where you just kind of do what you like with it. I’ll have my measurements down below, but what you add and how much really is up to you and your tastes.
You want it to have more cucumber? Go ahead.
Like a bit more tang? Add some lemon juice.
It’s saltiness you’re looking for? Just sprinkle in some more sea salt….

Once everything is prepared, just stir it all up and adjust the flavors to taste. Serve it with your favorite rice dish or even grilled meats for a delicious, refreshing bite with your meal.
Or you can just eat the sauce on its own with a spoon like I do… I warned you, I really do love that cucumber yogurt combo!
Laban b’ Khyar – Cucumber Yogurt Sauce
1 cup Yogurt (Full Fat or Greek)
1 cup Shredded Cucumber (about 3 Persian cucumbers)
1/2 tsp Sea Salt, or to taste
1/2 tsp Dried Mint, or to taste
1 small Garlic Clove, crushed (optional)
Lemon Juice to taste (optional)
Stir all ingredients together and adjust salt to taste.
Serve with your favorite rice dish and enjoy!
